Countdown begins

And so it begins, the countdown to my birthday. I am NOT happy. I only have 5 days left.

I made it through 30 just fine. Actually it surprised me how well I took to turning 30. This year, totally different conversation. I'm freaking the fuck out. I'm getting seriously close to my "mid-30's". I hate getting old. HATE!

I know, it's a part of life. Everyone does it. Blah freaking blah. I don't care. Getting old sucks! You get wrinkles and gray hair and body parts hurt that you didnt know could hurt like that. The list goes on.

Maybe when I make it to 40 I'll be okay with it. Until then, I'm going to throw myself a getting younger party every year. Fuck this getting older bullshit!

Everyone Survive?

I hope everyone had a great Thanksgiving. I know we did. It was very laid back, plenty of food. Perfect.

I actually planned my menu out pretty good this year. Not too much food. We just got a small turkey breast, pork loin, I cooked sweet potato casserole, squash casserole, cranberry sauce and rolls. I'm kinda proud of myself for not over doing it. I had one or two more items I wanted to do but I knew it would have been overkill. We had just enough to put us in a small food coma but not so much I'm sick of looking at leftovers.

Christmas may be a different story. I'm now on the look out for a bunch of Christmas-time desserts. :P

{Fail}

Yesterday, I attempted to make homemade fudge. Not the kind that you melt the chocolate chips. Real live homemade fudge like your grandmother use to make.

I don't own a candy thermometer since I rarely make candy. But.....giggle...I do own the thermometer from our turkey fryer. I tried using it. I'm not sure if it's the same but, hey, it reads the temp right?!?

I decided not to 100% trust the turkey fryer thermometer. I got a plate with a little ice water in it and tried the ball test. You know, if you drop a little in the plate, if it forms a ball, it's basically done. That's how I tested mine. The thermometer just wasnt getting to 238 degrees and I'm very impatient. Which could be why it failed.

Now, I didn't fail miserably by no means. It just didnt turn out like I think it should. It's a little 'dry'. I'm thinking that when you are suppose to stir the 'luster' out, I might have over done it. IDK. Will I try again? Maybe. It's a lot of work for a very thin sheet of fudge. I might double the recipe next time. That way it looks like I put a lot more work into it then I really did. :P

Broccoli, Rice & Cheese Casserole

One thing you will learn about recipes, there are so many different ways to cook one dish. This is mine.



1 Frozen package of chopped broccoli
1 Can of Cream of Mushroom Soup
1 Stick of butter
Jar or Cheez-Whiz
1 C. uncooked rice

Preheat oven to 350 degrees
Cook the broccoli as per the package.
As for the rice, for this recipe, I'm a huge fan of getting the 5 minute boil in the bag rice. It saves so much time.
I usually go ahead and throw my cheez whiz, mushroom soup, and butter in my 9x13 casserole dish and stick them in the oven. This way they are already melting and combining together.
Drain the broccoli and add the rice to the dish.
Cook for around 35-40 minutes.

This is a great make ahead dish. If you are traveling, you can always ask the host to reheat before serving.

Sweet Potato Casserole with Praline Topping

This stuff is like sex in a casserole dish. Seriously. 
2 lrg eggs, well beaten
1/2 cup sugar
1/2 tsp salt
11/2 tsp vanilla
1/3 cup milk
3/8 cup margarine, melted
3 cups cooked mashed sweet potatoes (21/2 to 3 lbs raw) 

In a mixing bowl combine first 6 ingredients, mix well.  Pour into mashed potatoes and blend thoroughly.  Spoon into a greased 1 1/2 quart baking dish.
Top with Praline Topping.  Bake at 350 degree F for 25-30 minutes.  If doubled, potatoes can be baked in a 2 quart baking dish for 2 hours.  Potato mixture will be thicker.

Praline Topping:
1 cup light brown sugar firmly packed
1/3 cup flour
1 cup broken pecan pieces
1/4 cup melted margarine

Combine brown sugar, flour, and pecans.  Add margarine and mix well.

thanksgiving

With Thanksgiving right around the corner, I've been trying to get my menu planned. I usually do the same thing every year. Fried turkey, fried pork tenderloin, rolls, cranberry sauce, a casserole and maybe a veggie. This year I think I'm going to do my sister's Sweet Potato Casserole, Green Stuff and maybe something else to level out the sweetness. I usually don't do a dessert since we're too full afterward to eat it. Although I did stumble across a  german chocolate cake recipe that I"m dying to make. :)
What is one thing you can't go with out on Thanksgiving?

I absolutely hate this time change bull shit. My days feel like they are just creeping along. I hate that by the time K gets home from work it's already getting dark. By 8 pm both of us are so bored and tired we're ready to call it a night.

Last night I played my sister on Mario Kart online for about 2 hours since neither one of us had anything better to do.

House Projects

Well, we have sorta kinda but not really started back on house projects.

So far, we have started refinishing a dresser of mine. I honestly dont even know where it came from or how long it's been around but it has seen better days. We stripped it and have started re-staining it a red mahogany color. It's not as red as a cherry stain but in the same family.
The stripper we bought is wonderful. I was a little pissed that when we bought it, it was on a shelf marked for $8 or so and when we checked out it was $17. But, it's totally worth it. Works miracles.

K also built me some floating shelves in my front bathroom .. nook. Whatever that waste of space is. The bullshit cabinet my dad rigged up in there was not working. It was that cheap particle board covered in plastic made to look like wood. It was non paintable. So we ripped it out, fixed the wall and my non wood working husband built me 3 floating shelves. Yay!
I did a little research and found this tutorial. Very helpful!

I'll try to get some pictures later and update. The shelves still need painting. So far they only have a coat of primer. I might get on that today. Maybe. ;)

Frugal Recipes

Since everything else is so expensive right now I'm doing all I can to cut back where I can. It's not easy but you gotta do what you gotta do right? ;)

I've been going through AllRecipes.com and other recipe sites trying to find good things to cook that either don't take a  lot of ingredients or at least take the ones I have on hand for every day use.
I came across this recipe on SouthernPlate.com

Crunchy Beef Casserole 

  • 2 Cups Corkscrew Macaroni (Rotini)
  • 1 can cream of mushroom soup
  • 3/4 C Shredded Cheddar Cheese
  • 3/4 tsp Seasoned Salt
  • 1 lb Ground Beef
  • 1 can (14 oz) whole or diced tomatoes
  • 3/4 C Green Pepper (optional – I leave it out for the kids)
  • 1 can french fried onions
Cook pasta as directed, rince and drain. Brown beef, drain fat. Combine all ingredients except french fried onions. Pour into greased 2 quart casserole. Cover and bake at 350 for thirty minutes. Uncover, top with french fried onions, and bake five minutes longer.

I'm cooking it tonight so I'll let you know tomorrow what the consensus is. :)

Well, the hubby did not like it. It was eh to me. The tomatoes absolutely overwhelmed it. We are both not real big tomato fans but I put them in recipes all of the time. I also wonder if I could use seasoned tomatoes if that would have made a difference.
The French's fried onions made it. Without them, I dont think I could have eaten it. It was very bland without them.
So overall, unless I can promise to make it taste better next time, I just don't think K will let me make this again. Coming from a human garbage disposal, that is rare. He usually eats anything.

Wish List

I can't believe that Christmas (and my birthday) are just right around the corner. I swear this year has just absolutely flown by.

I'm starting to discover I'm also getting out of the practical gift receiving again too. When we first bought the house everything I wanted was for the house. Really up until last year. That was the first year that we bought stuff that we wanted. Not needed.

This year is the same. Everything on my wish list is things I want, not need. Example:

* EA Active for Wii (which I'm discovering that vs 2 is coming out if not already out)
*PSP with Kingdom Hearts newest game
*Couture by Juicy Couture
*Epic Mickey for Wii
*Pink PS3 controller
*Steam Mop

Ok so that last one is practical and for my house but I figured with the rest of the wish list being all wants it evens out. LOL

*Trans Am*

Every since I was about 19 or 20 I've been in love with trans ams. The first one I fell in love with was the '91/'92 year model. They had the pointy nose on them. My future brother in law just happened to own one at one point in time. It was the second manual transmission cars I drove. It turned me on like no boy ever could. :P

Fast forward a couple of hundred years. (yes I feel that old some days lol) We finally bought one. It's a '96 with a LT1 motor. Which I know most of you are like huh?!? when it comes to that. lol I understand. It's not the body style that I wanted but it has the motor that K wanted. So what we are going to do is get the front cap off of a newer model and replace it. That way I get my body style and K gets his motor. It's a win/win situation.
Well, that is until we priced replacing the front cap. It's not cheap.

Then K comes home the other day from work and tells me a friend of his will trade him the front cap off the body style we want for K helping him do a motor swap. Hells yeah! Done deal.

This car is your typical used car. She has her issues. We've been slowly working on them and figuring them out one by one. We've about come to the conclusion that some idiot owned her before and did a hack job under the hood. A lot of wires were broke, spark plug wire replaced with one that didn't fit. It's seriously a miracle that she ran to begin with.

Want to see her?!?!?


Isn't she a beauty!?!? I've named her the mistress since my husband loves her more than he loves me some days. :P

Menu This Week

I have been looking forward to the weather getting cooler for a while now. I can actually get in the kitchen and cook again. Now I'm having a hard time trying to come up with things to cook. I get tired of the same thing every two weeks or so.

Home made pepperoni calzones. (no recipe link just pizza crust, cheese, sauce, topping of choice, fold, cook)
Chicken Enchiladas Which by the way, this has to be the best recipe I've found for them. Seriously.

Mackenzie Update

The vet called a little while ago. I knew in her voice that it wasnt good. She didnt even have to tell me. They got the test results back from the lump itself, it was a stage 2 mast cell tumor.

I'm devastated.

She said that they did remove it all so that's good. She said that it could come back, it could not. I already have an appointment for Friday to get his sutures looked at so she wants to check him for more lumps. Which I would have thought she would have done that to begin with but that's me. Also said she wanted to check his lymph nodes. She wants to check him every 6 months after. Unless another lump pops up then I have to take him back immediately so it can be removed.

I googled it and it doesnt look bad. Not that bad. (the end results that is) This type of tumor is almost common in some dogs. Schauzers being one of them.

I hate it. I'm so sad. Just heartbroken.

I caught him eating cat shit and didnt even get on to him. lol

Life as we know it

Life, such a complicated little thing. ;)

Noah is adjusting good. Actually he's spoiled rotten. You can't walk in the kitchen with out him absolutely hollering at you. He expects food at any point and time during the day. Cute now, will be annoying later. :P

Mackenzie had surgery Thursday. He had a lipoma. We, I, had let it go so long that it had actually started to die off and become infected. I feel like a shitty "mom". :( I just didn't want to have to face it if it was cancerous. Yeah I know, even more of a reason to get it checked out.
I brought him home Friday and it was gawd awful. The incision is huge. Huge! He's on antibiotics and pain meds. The pain meds wore off around 7 last night. It absolutely broke my heart. He was hurting so bad he wouldnt jump on the couch and I was scared to pick him up thinking I would hurt him. So today I'm giving him half in the morning and half this evening. No sense in him hurting like that.
The blood work came in and he's OK. So that's good.

Lacy is actually playing with Noah. HUGE step for her. We were having problems there for a while where she was attacking me. Like, huge biting, stalking attacks. Once on my face. K was ready to have her put down. We dont know what caused it or triggered it.

Me and K are doing good. Typical life stress but, good.

Hard Candy Take Me Out Liner



Seventeen magazine offered a free sample of the Hard Candy Take Me Out Liner. Not being able to pass up just about anything free, I jumped on it.

I honestly got it months ago but just go around to using it this past Saturday. I'm not a fan. It's a very creamy pencil. It is suppose to be good for smudging but I found it just made a mess on my eyes. I put a light line on and it was too much. If I blinked it was all over my lower lid.
The website says that after 30 seconds it sets up and you're good to go. Wrong again. By the time I got home, it looked like I had 2 black eyes. It was slowly heading south.

Definitely, do not recommend. I'll stick with my gel eyeliner or just a regular pencil.

Nothing Major

Nothing major is going on right now and I can't complain. At least not in that department. lol

We just finished watching True Blood season 2. And holy hell. Now I see why so many ppl are addicted to that show. Um, we also just added HBO to our line up just so we could finish watching this season. *blush* Yeah I know. haha

We went riding 4 wheelers last weekend. Had fun but not as much as we normally do. It just wasn't the same. We are so use to having ppl ride with us that actually ride. This time it was just daddy, us and one of K's childhood friends. This was his first time to go so we had to show him all the ropes. ha!
But, we must not have done too good of a job since K left to go help some people out that just drown out theirs and R (his friend) falls in a huge hole and the 4 wheeler rolls. The hole was seriously so deep that he was able to go under to keep the 4 wheeler from coming over on him.
Everyone was ok though. 4 wheeler and R. Embarrassed, but OK.

We didnt go ride this weekend. We couldn't have if we tried. The knuckle is messed up on the axle on ours and we have to get it fixed before we ride again and really mess some stuff up.

We are now the proud owns for the second time of a 96 Jeep Cherokee. The woman we sold it to, fried the motor. So she said to give her $400 for a down payment on another vehicle and we can have it.
I swear she's a moron for that. Instead of fixing this one she goes out and gets a bigger piece of shit.
Oh well. Her problem, not ours. Now we get to re-sale this one and make more money. LOL

I guess that's really it. I know, boring right? Sometimes, I like my life a little boring. Always having something going on is not fun in my book. It gets old quick.

Old Blue

Old Blue is my husband truck. He has loved this truck since his grandfather introduced him to it.

"Papa" finally decided after they blew the head gasket and K's uncle let it sit and rot for 2 years, to give it to K. He was absolutely ecstatic! Me on the other hand, not so much. I grew up around people working on vehicles. I know how much it cost. I also know how much it cost to build a 'hot rod'.

Well after it's been sitting for years, K has decided he wants to start working on it. We got the cab off of it the other day and brought it home. *it's stored somewhere else*

K's birthday

I love spoiling my husband. It's my job.

This year was no different. I've been researching HD tv's for quite a while now. We've wanted one for quite a while now. lol

We got up for his birthday and headed to Sears. I told him he had a $50 limit. Use it wisely. I kept hinting at going to electronics to look at movies or a game. He reluctantly headed that way and never ventured over to the tvs. I swear. lol I try to hint and the boy just doesn't get it.

So I just flat out walk over there and start looking. We looked around for about an hour before deciding on one.

We got the LG 42". Its quite nice. lol We went through absolute HELL to actually purchase it but it was/is worth it.

Of course we immediately came home, hooked it up and watched Avatar on BluRay.

Small update

K went back to the doctor June 10th. He's basically fine. The doc said that he can and will do the surgery at any point and time. It is 100% up to K. This isn't something that has to be fixed right away. As long as he can handle the pain, he is OK. Basically he has arthritis in his shoulder.

So sad that a 28 year old has to live with pain like this. I guess that is what happens when you basically take care of yourself growing up and had to work to buy your own school clothes and everything else.

It sucks.

The doc did give him 2 months of anti-inflammatory. If it gets too bad we'll cross that bridge then. For now he's slowly learning to slow down.

Where to begin?

I have a habit of doing this. For those of you that haven't deleted me off your blog roll yet, Thank You! lol

For starters, we've decided not to sell the house right now. The market here is not good. At all. We would barely be able to sell the house to make enough to break even. It's just not worth it.

I guess that is a good thing since we have completely stopped working on house projects. I think there is just still so much to do and we got burned out on it.

Then the selfishness comes in. It's four wheeler riding season and a lot of our money goes to that. With us putting selling the house on hold, I dont feel too bad about putting money into the four wheeler. That is also our little vacation. For one day a week or most of the time twice a month, we get to say fuck the world. No phones, no bull shit, no bills. Just us having an absolute blast.

We've also had a little drama with K's work. It's settled now but for a day we thought all hell was going to break loose for a month. Like I said we got it straightened out but good grief it was stressful.

Now, back to K. He's been having shoulder pain for a month now. Called our doc and they set him up to have a MRI done. He gets the results and we are told that he has a tear in his shoulder. They send us to a specialist.

We get to the specialist this past Monday. They did a xray on him. Diagnosis: not the tear that is giving him problems, it's because his collar bone is rubbing against his ?? . I'm not sure what he said. So he gave him a steroid shot. Well....after the doc had been pushing on him and then the needle going in his arm, K comes this [] close to passing out. Scared the shit out of me. Not really the passing out but the shaking.
He goes back in one month to get the final diagnosis. Either this steroid shot fixes it or he has to have surgery.
Oh! He kept saying that the pain was radiating down into his hand. Nope, not this problem. It's his C6 in his neck. So if the steroid shot doesnt fix that too, he has to have have a MRI done of his neck and we'll proceed from there.
*sigh*

On top of all of that we just spent $200 on 2 new tires for the car. This is all happening with in 2 days. Monday and Tues of this week. It's been hell.

So that is what is currently going on with us. It's not fun but we'll survive. :)

Pictures I Promised

Sorry guys. I know I promised these forever ago. I crashed and burned for a week. :)

We painted the light fixture. Cheap Dollar General Metallic Silver in a can. $3. Turned out great!




Same with this one. Painted it. It was brass. ew :)


Shower curtain. I am ABSOLUTELY in love with it. It matches the gray perfect! Adds just a hint of color to the room. Nothing over bearing.
Here's my question on this part: What color rug should I go with? I'm just putting white fluffy towels in here. It's only to stage. No one ever uses this bathroom. Well not to shower or anything. I was thinking of keeping my old blue runner rug down until we get ready to show the house then adding a white rug. Just to keep it crisp and clean.
What do you think!?!?


Painted cabinets. We used water based paint this time instead of the normal latex. HUGE difference. I'm not sure if I'll ever use a latex based paint again. P.S. it was Kilz brand from Wal Mart. Highly recommend it!
Oh and we also painted the hardware. I was seriously scared to do it but it turned out fine.
I'm all about saving money on these projects. ;)


We still have to replace the counter top. That is the only thing left to do in here. Well we have to touch up around the ceiling.



I have never been so proud in my life. We are absolutely kicking ass and taking names on these projects. OK, so the tile in the dining room/kitchen whooped our ass but we still made it look damn good. lol

When we get the quarter round down I'll get pics of that up. Nope, I lied. I'm going to make every one wait until I get the kitchen cabinets painted. I truly might start on that this weekend. Or maybe this week. I know it's going to be a total pain in the ass but it has to be done. The difference in the cheap wood cabinets and them being painted is HUGE! My house already looks totally different with the tile. I can't wait to see what the kitchen cabinets are going to do. I just might not recognize it. LOL

Now if I could only get $10k to rip the carpet out, hire someone to lay hardwood, I'd be ecstatic!

I'm tired

Seriously. This tiling shit is for the birds. I haven't sat down to balance the check book, pay bills or plan my menu. But, my kitchen/dining room looks DAMN good! lol

I promise to get all of that done today and get some pics posted. OK I lied I don't promise. My arms are killing me. I dont even have the energy to type this. lol But, I will get it done soon. :)

Updates

When this post publishes, we should be installing the tile in the dining room/kitchen.

Yesterday, I pretty much finished painting the bathroom cabinet. Little touch ups here and there and that's it. I'm waiting on the shower curtain to come in. Then I'll get updated pics of it up.
I still have to figure out the color of the bath rug I want to use and get it for it to be complete. Oh and something to put on the walls. No idea where/how I want to handle that.

I will be so glad when all of this is finished. Well, at least the big projects. The smaller ones require shopping and I'm all up for that. (Minus the spending of money) lol

My dad has been an angel to us during this entire project. If not for him, I'm pretty sure I'd be heading for divorce court. ;)

Front Bathroom

We've got the tile laid. The cabinet is half ass painted. We've repainted one of the light fixtures and still have one more to do. We bought a cheap can of silver spray paint from Dollar General to repaint them. Of course they were just cheap builder brass fixtures. I'm not putting a lot of money into this house when we are NOT going to get it back.
We still have to replace the counter top. There's a place downtown that is Surplus something. I think we're going to check it out next weekend to see what they have. It probably won't cost us around $40 or so to replace it. Not too bad. It's a small cabinet.

So anyway. Here's a couple of pictures. Now warning, this bathroom is still disaster area. We've got more to do and a lot to clean up before it's finished.

House Projects

The big list is slowly dwindling down. Now here comes the short list. AKA the money list. This is the list that is going to cost us. It's the small things that we have to buy. ie: New bedding for the guest room since my so called best friend ruined my brand new bedding and never paid me for it or replaced it. Yeah, bitter much. We have to buy blinds for 2 windows. Possibly 3 since the the blinds in the dining room are broke. Cheap shit. :( I've already purchased the shower curtain for the front bath but I dont have rugs or towels to basically stage the room.

Trust me, the list goes on. Now can someone tell me where that money tree is because I'm going to desperately need it in the next month or so.

Menu for the week of 1/10

It's seriously cold here. Totally abnormal for Mississippi. But...it is suppose to warm up to around 60 by the end of the week. I'm trying to plan my menu according to that. Who knows if we'll actually see 60 or not, but I'm hoping.

Sunday: Spanish rice bake. This is one of our new faves. Fills you up and is super quick. Perfect for today since we have so much to get done.

Monday: Chili Figure I'll do this while it's still pretty cold.

Tuesday: Baked Ziti

Wednesday: Lasagna with white sauce. This is a crock pot recipe so I don't have a link to it. Sounded easy and good enough so I thought I'd give it a shot. ;)

Thursday: Pulled Pork

I want something for Friday night but I'm stuck. I'm running out of ideas. I might make a small grocery run at the end of the week if I come up with something.
